I tried something new to me this week. Making waffles. I know, I know, what kind of girl am I that I hadn't made my own waffles before? I just never had a waffle iron and Eggos came fresh frozen from the market. So last Saturday, I just got it in my head that I was going to make my own dairy-free, high fructose corn syrup-free, low sugar waffles. Trotted down to Target to get a waffle maker and I was on my way. Here's the rub, I dont usually cook. I microwave things really well, but actually cook... not so much. I found a recipe on the internet by asking the all-seeing Google machine, tweaked it up a bit to meet my needs, and whipped up a batch. And, much to my great surprise, they were really good. Much better than Eggos for certain! I liked them so much I made three more batches and froze them. In essence I created my own Eggos. I'm grateful I decided to try something new and I was able to prove to myself that I can cook something yummy without the use of a microwave.
